Recipe for sandbakkel cups:
1/2 cup sugar
1/2 cup margarine or butter, softened
1 tsp vanilla
1/4 tsp almond extract
1 1/4 cups all purpose or unbleached flower
In large bowl, combine all ingredients except flour; blend thoroughly. Stir in flour; blend well. Chill dough 2 to 3 hours for easier handling.
Heat oven to 350 degrees F. With floured fingers press dough about 1/8 inch thick into 36 sanbakkel molds (tartlet tins work fine). Place molds on cookie sheet. Bake at 350 degrees F for 10 to 13 minutes or until lightly browned. Cool 3 minutes; remove from molds, pressing edge of mold lightly to loosen cookie.
